From Cooking Up Sauces to Protecting Natural Resources
Declan Harper previously worked as a chef, working in various kitchens and pubs in and around Edinburgh but decided to change his path and is now studying Environment Management at SRUC Edinburgh campus.
Tell us a bit about your past career:
Working in various kitchens and pubs in, and around, Edinburgh. Good crazy fun, mixed with a lot of hard work and dirty hands. I have met most of the best and most interesting people in my life from working in the hospitality industry.
What led you to make the decision to change your career path?
Fun but ultimately unrewarding non purposeful work, I didn’t feel invested in what I was doing and my passion wasn’t in it, the state of the world and the environment was really depressing me and I felt powerless so I decided to do something about it.
Why did you choose to study at SRUC?
I was looking into courses to do with the environment and nature.
Tell us a bit about your experience at SRUC?
So far it’s been great, the course content is brilliant, and the staff are all helpful and friendly. It’s great to be doing something positive towards helping out the environment and to meet so many others that are already doing so.
How involved do you feel in SRUC aside from your academic course?
Its still quite early yet and obviously due to the Covid-19 pandemic things are a little bit restricted there, but there does seem as though there will be plenty opportunities and I hope to get involved with them.
How has your decision changed your life?
It has given me a new sense of direction and purpose, and shown me others who have similar interests and concerns. Its good to be taking control and moving my life in my own direction.
